WHere is a simplified interpretation of a cocktail found on our latest cocktail list. Designed as a party-sized pre-mixed that's loaded full of flavours of a festive period, which makes it excellent for a holiday party. Save the extra cordial for brunch beverages, sweets, or to make more rounds of bikinis.
The Bikini Cocktail
Serves 10 people
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put the listed items inside a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, take off the burner and let it to cool fully. Decant into an clean bottle, seal and store in the fridge, where it will keep for about four weeks.
To make Batch Mix: Pour all the spirits and syrup in a sizeable container, allow it to infuse for an hour, then filter it , ideally through muslin, making it fully clarified.
For serving: Pour 85ml of your batch mix into a stirring glass containing ice, and stir lightly for a minute to chill. Pour into a chilled martini glass or equivalent, garnish with some cranberries adding the final touch with a quick spritz with the mandarin essence over the top.
